He tied up his teenage apron. In 2004, after graduating from the Molfetta hotel school, passionate about his profession and seduced by the idea of deepening it, he decided to leave Puglia to start a training course that led him to deal with other realities of cuisine and cultures gastronomic. Self-taught, Stefano loves his land and captures its essence by working with quality raw materials. He presents himself with a personal style that has respect for the territory but develops without restricting himself within limits and definitions. A refined but intelligible cuisine, which strikes the eye and the throat for its simplicity and knows how to take some liberties between unpublished flavors and combinations without being convoluted.
In August 2011, Quintessenza Restaurant opens its doors, the fulfillment of a dream but also a new starting point.
He became a member of the prestigious Jeunes Restaurateurs association since April 2016. Later in November 2016, Stefan was awarded one star by the Michelin Guide.
