I was born a butcher, I followed in my father’s footsteps and was more or less brought up in a butcher shop. In the early years, I had a love/hate relationships with it but grew to become very passionate about it. I left school when I was fifteen to pursue this career, full-time.
One of the first competitions that I was involved in was the All Ireland Sausage Competition; in which I won the best pork sausage. Additionally to this, I won the Best Continental Style sausage for my Argentinian style chorizo, as well as various other awards.
In 2017 I was selected to represent Ireland in The World Butcher Challenge, which was held in Ireland for the first time ever. After a year and a half of training with the team, meeting up every week, we came out on top. Winning as a team. On top of our teams success, I was also picked as one of the six best butchers in the tournament to make up the world team.
Part of my role within team Ireland was to come up with the recipes and to produce the sausages in the competition; in which I won the worlds best beef sausage.
