With a background in food business and marketing, Emmet has been working in the meat industry in a number of countries including Ireland, the US and the UK for his career to date. Due to the variety of positions and markets, Emmet has an in-depth knowledge of the different production systems, breeds and maturation techniques and how this can help deliver varying taste profiles for steaks.

Emmet is currently working as the UK Meat Market Specialist with Bord Bia, a role which allows Emmet to work closely with livestock farmers, meat processors, catering butchers, Michelin star chefs, retailers and food service operators. Such exposure gives Emmet a very unique experience of the whole beef supply chain and the various factors at each step of the process which helps deliver the high quality delicious tasting beef.
