Winning the award for best newcomer at the Butcher’s Shop of the Year Awards 2023 in May was just the latest achievement for Butcher Farrell and his brand. His story started in China and Hong Kong 10 years ago where he realised his long-held ambition to be an expert meat chef and butcher.
He specialised in sourcing the best meat from around the world to supply the very specific demands of top chefs from diverse cultures and cuisines. He learned to break down carcasses to provide a multiplicity of different cuts and worked in their restaurants as a chef to learn their methods and techniques. It was during this time that Butcher Farrell developed his passions for dry ageing, high-welfare meat and bespoke butchery that inform the ethos and style in his award-winning butchery today.
On his return to the UK, Butcher Farrell continued his learning odyssey, travelling the length and breadth of the UK visiting butchers for a well-known butchery seasoning company and managing several butcher’s shops. His desire to create a butchery that embodied his own passions and principles led him to establish Butcher Farrell’s Meat Emporium in West Lancashire. It is hugely popular with chefs and home cooks in the region but, thanks to a growing online business, Butcher Farrell is developing a well-deserved reputation for excellence nationwide.
