New Zealand-born, Alana is an award-winning butcher and the Training & Education Manager at HG Walter, one of the UK’s leading specialist butchers. With nearly 20 years of experience in the meat industry, she specialises in technical butchery, carcass breakdown, and developing consistency, precision, and high standards, delivering hands-on masterclasses and demonstrations for chefs and large-scale hospitality teams, alongside training and mentoring the next generation of butchers through apprenticeship development. She is an experienced international judge, having judged at the World Butchers’ Challenge in France and the USA, alongside Butcher Wars competitions across Australia, New Zealand, the Czech Republic, Ireland, Scotland, and England. She has also judged steak and barbecue competitions, including SCA and ABA events throughout New Zealand and Australia. Alongside her industry work, Alana hosts Knives Down, a podcast in collaboration with the World Butchers’ Challenge, featuring conversations with leading voices in the butchery industry and exploring the people and ideas shaping its future. Her work focuses on technical butchery, yield optimisation, sensory evaluation, and product presentation, combining practical experience with judging, training, and education. She is committed to maintaining the highest standards across the global meat industry.
