Roman Kóňa is the founder of Mäso od Romana, an artisanal Slovakian butcher shop, grill, and culinary academy established in Bratislava in 2020. His nearly 15-year career with beef began by founding a small burger restaurant that he successfully scaled into a popular chain. After selling the business, he pivoted to his true passion: premium beef, dry-aging techniques, and meat science. Beyond sourcing and processing world-class cuts, Roman is a dedicated educator and digital content creator. Through his masterclasses and workshops, he has trained approximately 4,000 professional chefs and home cooks in the art of steak preparation and beef quality. He also shares his culinary philosophy online, inspiring a vibrant community of meat enthusiasts daily. As a judge for the World Steak Challenge, Roman brings a sharp technical understanding of fat marbling, flavor development, and industry standards, combined with deep respect for global producers. He is honored to contribute his expertise to this year's panel.
