Craig is a sixth-generation butcher who specialises as a bacon curer. He was the UK's only gold award winner at IFFA Frankfurt in 2016, 2019, and 2022. Craig is on the executive committee of the National Craft Butchers UK trade body since 2018. For the last two years, he has held the role of treasurer of the organisation.

His passion for the meat trade has led him to work with the UK government to improve the policies for butchers as a whole to work with while meeting legislation. These have included setting out industry-standard paperwork for Natasha's law, PPDS and the Windsor framework.

Craig is also a keen traveller, pre-covid he had visited over 30 countries on 4 continents sampling local foods.
