Carolina is a veterinarian who has been working in the meat industry since 2006, focusing on food safety issues, animal health, animal welfare, and international trade, among other areas. Trained in Barcelona, she spent her childhood and youth in Chile, where she was involved in livestock activities and developed an appreciation for high-quality beef. Since 2021, Carolina has held the role of Veterinary Advisor at UECBV, the European association representing the interests of the meat industry and livestock traders. In January 2024, she was appointed as the Executive Secretary at ENSCA (European Natural Sausage Casings Association).
