Richie is absorbed in the language of describing taste. He holds the WSET Diploma in wines and spirits, a Masters of Arts in Gastronomy and Food Studies, is an associate judge at the International Wine Challenge, a qualified Cava Educator and recently presented a paper on the language of wine at this year’s Dublin Gastronomic Symposium. His thesis focused on the Irish craft cider and systematically describing the taste of cider. Having obtained the IBD brewing certificate, his is currently also undertaking a post-graduate in brewing and distilling.

As part of a beef farming family, he is interested in how different breeds of cattle and feeding systems result in differences in the flavour, juiciness and tenderness of steaks – separate to the differences which arise from butchering and ageing.

With over 25 years of experience, his primary occupation is in project management.
