The cattle are fed on both grass and grain, resulting in a fuller flavour and a beautifully marbled fleck of fat – which melts into the meat when grilled, enhancing its juiciness and taste.
Foyle Food Group sources locally produced beef from its Producer Groups, who benefit from the company's Farms of Excellence program. This initiative shares knowledge on producing sustainable beef. Farmers are encouraged to attend various farm visits throughout the year, where Foyle Food Group demonstrates its Agricultural Decarbonisation Roadmap. All beef supplied to Miller & Carter by Foyle Food Group comes from cattle under 30 months of age.

This steak was entered by Anzco Foods. Ito Wagyu is a highly marbled, delicately textured beef with a rich, sweet aroma and high levels of oleic acid. The unique "Wagyu beef aroma" is reminiscent of peaches and coconuts, spreading through the mouth while chewing and giving the beef its distinctive flavour profile.
Raised to the highest standards of care in Kagoshima Prefecture—the heartland of Wagyu production on the southern tip of Japan—Ito Wagyu cattle are fed a specialist diet of grass, rice straw, and whole crop silage. Each animal is fully traceable back to its birth via a ten-digit ID number to ensure provenance and genetics. The cattle are individually graded to the unique standards set by the Japan Meat Grading Association. These grading standards assess various criteria, including marbling, fat colour, meat colour, and tenderness. Carcasses are then given both a yield grade (A, B, or C) and a meat quality grade (1-5), with the highest possible grade being A5.
Anzco Foods' entry is at the top end of the A5 scoring criteria, with the highest marbling score of 12, qualifying it as A5+.

To preserve its degree of ripeness and flavour, the product was shock-frozen on the day of packing and defrosted for tasting. This process ensures the highest quality.
