Having gained a BA degree in finance, i decided to enter the kitchen at deanes restaurant in Belfast. Working there for 7 years throughout 4 sites, gaining industry experience, I was part of the small team that won a michelin star under Danni Barry in EIPIC.
In 2016, myself and Saul McConnell set up Noble restaurant in holywood, an intimate small 28 seater with a focus on seasonal top quality produce in an a la carte menu. Since we’ve opened we have gained a Michelin bib for 5 years, and are now in the process of a small expansion at the restaurant to include a 20 seater wine & snack bar.
In 2021, I was part of the team that started melter, a northern Irish brand based around tasty toasties & cracking coffees. Now having 3 sites and 1 mobile can operating throughout Ireland.
